– Butter – Sugar – Eggs – Vanilla – Self-rising flour
In a large bowl, cream together softened butter and sugar using an electric mixer, then mix in eggs and vanilla extract before adding self-rising flour and mixing until well combined.
Roll out the cookie dough thinly on a floured surface, cut with a cookie cutter, and place on a greased cookie sheet; bake at 350°F for 10 minutes. While warm, sprinkle with colored sugar or ice with vanilla icing.
To make the icing, cut room temperature butter into confectioner's sugar, then add milk, vanilla extract, and optional food coloring, stirring until smooth and creamy.
Spoon icing onto cooled cookies, spread with the back of a spoon, sprinkle with rainbow sprinkles, and allow to dry for about an hour before stacking.
