– Mixed spring green lettuce or fresh spinach – Fresh strawberries – Mandarin oranges – Dried cranberries – Pistachios – Crumbled feta cheese – Sliced avocado
Combine lettuce, strawberries, orange sections, avocado, and dried cranberries in a large bowl and toss.
For the salad dressing, blend all ingredients except the oil in a food processor or blender, then slowly add the oil until well combined (about 10-15 seconds).
Add the dressing to the salad and toss (you may not need it all). Before serving, scatter additional strawberry slices, orange slices, avocado, and feta/nuts for a beautiful presentation.
