– unsalted butter – softened – sugar – eggs – vanilla extract – all-purpose flour – salt – baking powder
Preheat oven to 350°F. Cream butter and sugar until fluffy, then add eggs and vanilla. In another bowl, whisk flour, salt, and baking powder. Combine wet and dry mixtures to form cookie dough.
Scoop dough onto ungreased cookie sheet, flatten with bottom of glass, and bake for 10-11 minutes. Cool on sheet, then move to rack.
For frosting, mix powdered sugar and butter until smooth, adding coconut cream if needed. Add remaining coconut cream and extract, then frost cookies.
Chill until ready to eat, then add lime wedge for extra flavor.
