At Last! Today is the debut of Quick Fix Suppers, the video series I’m hosting on SouthernLiving.com. I’m so excited to bring you this series, and especially today’s recipe! Since filming these a few weeks ago, I’ve lost count of how many times I’ve made the recipe I’ll be showing you today. It’s just that good (and so very simple).  At the end, you’ll see the coolest tip, too!

New York, NY – Southern Living introduces “Quick-Fix Suppers,” a new video series starring cookbook author and blogger Christy Jordan of Southern Plate, who demonstrates how to make dinner in 45 minutes or less.

Daily time-saving tips accompany Jordan’s weekly 3- to 4-minute, how-to videos so people can spend less time in the kitchen and more time around the table. The video series is a companion to the “Quick-Fix Suppers” column debuting in the magazine’s June issue, hitting newsstands Friday, May 20, and features new video content updated weekly.

  1. When I make tacos or burritos I tend to overfill them. With your use of the muffin tins, now I can fill them perfectly. Loved the recipe and l love you too. Great luck to a great gal!

    I loved the recipe except for the cilantro. I am not a fan of it so I will leave that part off.
    The muffin tin is a great idea too. I will have to remember that the next time I make tacos.

  3. My family loves taco night but who knew all the different ways to make and serve (muffin pan) tacos. I can’t wait to surprise my family with a different taco for taco night. Love your video on Southern Living and of course Southern Plate.

  4. What a pleasant surprise you are. Calm, natural and totally in control during the entire video. I loved the tip about the muffin pan for a taco holder. I have experimented with many methods to hold tacos, but yours is outstanding.

  6. It has been so much fun coming along on the ride of seeing Southern Plate from its early days to where it is at now. But when I stop and really think about it, I think the thing that makes you stand out is how you put God first in everything, then family and friends. And it really comes through seeing you in the Southern Living videos, it’s just a wife, mother, and daughter that is sharing her joy in cooking for her family.
