A neighbor and I were recently talking about our parents/grandparents having their own chickens. They could go out, select one, grab it, and wring its neck, then pluck it, clean it, and cook it. Don’t think I could ever wring a checken’s neck!
My grandmother left her home in Ireland when she was 16 to come to America. She was miserable so she went back home. Her parents put her right back on the next boat to America. I can’t imagine how hard that was for all of them!
I can’t even begin to imagine either. It would be so scary for both her and the parents!!
Am so interested in trying this casserole. At almost 83 (BD on Sunday), I still enjoy “trying” new recipes. Do you have a nutrient chart for this dish? Doing a good job there, Christy, both for body and spirit! Blessings!
The Tater tot taco casserole was so delicious!! Thanks!

I am so glad you liked it!!!
My grandfather retired at 40. I never remember him getting up and going to a job. He stayed outside most of the day, only coming in for lunch (they called it “dinner”), watch one of his “stories”, and returned to work in his garden or his barn until suppertime. Oh how I loved to spend the night with them! They taught me so much about loving your home!
Oh my goodness, I can just see it in my mind now!!!
My grandparents died many years before I was born. The thing I envy the most about my father’s parents and grandparents was there ability to own homes and small farms in the county I live in. I can’t even afford a 1 bedroom condo with a good job, I have a rented room! I can only dream of a farm. I’d be happy with a small yard to grow tomatoes. Where my grandparents hog pen sat is now an insurance auto repair compound lol.
Times sure have changed!!
Both my grandmother and grandfather dipped snuff. My grandmother was a lady from the word go, but she could sit on the porch swing, put two fingers to her mouth, and spit that snuff spit clear to the middle of the front yard! As much as I tried to copy her, I could never spit like that (I could also never dip snuff).
I couldn’t do those things either Wendy. I bet she was a character!!
