Spinach Dip (Popeye Would Be Proud)

I’m going to tell y’all something today and I need this to stay just between us. You see, I love Alabama. I have lived in Alabama all of my life (except for a three month sabbatical to Georgia) and I plan on spending the rest of my days residing in this great state. If this secret gets out, though, I just might be deported.

Here goes: I don’t watch football.

Whew! That felt good to get off my chest! Not only do I not watch football, I don’t even care about football. Whats worse than that, I think of Alabama and Auburn as the school you go to if you want to be a lawyer/doctor and the school you go to if you want to be a Veterinarian/Engineer.
This drives my son stark raving mad. Just about everyone in Alabama follows football religiously and you’d have a hard time finding a house who didn’t support Bama or Auburn. The rivalry is legendary. My son wants so badly to know where we stand and whenever he asks which is the best, my reply is “Well, that depends on what you want to be when you grow up. They’re both good schools”.
Yeah, I know, I’m awful. Most of my family are Bama fans (Roll Tide! for y’all…) but I’m married to an engineer and and navy is my favorite color (War Eagle! for y’all…). I’m awful, I know. Trust me, I live with my shame (I have just been told to state that the two male beings residing in this house are Georgia fans. Well heck, I’m a Georgia fan, too. I love to go to Georgia. There is some awesome shopping in Atlanta and have any of y’all been to the North Georgia Premium Outlet mall? It sooo rocks…oh wait. I have just been told the “Georgia fan” thing was a reference to football. ~sighs~.)
I actually called my husband and asked him if the super bowl was this week because I had been seeing commercials and blog posts about it. I may not be a football fan, but I AM a football FOOD fan! So, in honor of the Super Bowl (which I am told is this Sunday), I am posting a recipe for classic spinach dip. For all you football fans, don’t ever second guess whether or not to invite me to a football party because I just look at this as another great occasion to make food for and show up loaded down with dishes! You watch the game, I’ll serve. Gosh, I love to feed people.
Oh, and I just broke my rule again of not discussing Politics, Religion, Football, or Pyramid marketing schemes on Southern Plate (cause either of those’ll gitcha good and kil’t in the south!). So far I’ve broken it twice and football was the cause each time. Maybe I’m more of a sports person than I thought…
You’ll need: Mayonnaise, Sour Cream, Green Onions, Spinach, and Knorr Vegetable Soup mix. That’s right, this recipe is right off the Knorr package. Hey, its good and its simple, and you know I’m all about not over complicating things!
The original recipe calls for water chestnuts but I shudder at the thought of ever eating a water chestnut so I always leave them out. A great substitution if you still want that crunch (and don’t like water chestnuts) is to add slivered almonds. YUM!
This is what your spinach is gonna look like in the box. Thaw it well. I place mine in a plastic bag and stick it in the fridge overnight to do this.
Now you’ve got to squeeze all of the juice out of your spinach. Its amazing how many tools we can do without in the kitchen if we just get in there and use our hands!
Once it is squeezed dry, you’ll have this.
Add sour cream.
and your green onions. To chop mine, I just use kitchen shears and cut them over the bowl.
Add mayonnaise.
and your vegetable soup mix.
Stir and you have spinach dip! Let this sit in the fridge for several hours to allow the flavors to blend. I like to make mine the day before. This can be served warm or cold. Those Great Value brand wheat crackers at Wally World are excellent with this!

My brother’s sense of humor. He put this on the sign by his BBQ restaurant and has had folks stopping all week to have their picture made next to it! No, we don’t really eat possum in Alabama, but we do like to make folks wonder!
Oh, bless your guys’ hearts! It must be hard being Georgia fans in the middle of Alabama. My husband is also a Georgia fan (thus I am by marriage), and we are fortunate to live 5 minutes from the Alabama/Georgia state line, so even though he works with Bama/AU fans, fellow Georgia fans are never that far away.
By the way, this dip looks great, a sneaky way to get my kids to eat some veggies!

Nope, don’t watch football either. Nor does my husband. Yes, I know that makes him really strange. But this Sunday, at the Elks Lodge, we will be having a Super Bowl Party. We’re both going. He’ll drink beer with the guys and pretend he likes football for awhile. I’m thinking I’m going to take some cards and see if I can’t get a good game of Hand and Foot going. And I think I just may make some spinach dip to go along with it. Yes, I’ll be useing slivered almonds also. My strange husband also does not like water chestnuts. But I bet we have fun anyway! Yeah!!

I aint a real football fan either. Ya know, Im wondering if maybe there are those of us that just didnt inherit a “love of football” gene. Oh well, guess its a mystery we will never figure out, or maybe, I might have been dropped on my head too many times. NAH!!!
forgot to add, I do love this dip, and spinach sauteed with onions and the drippins from frying pork chops…YUMM YUMM YUMMY!! Now I gotta go make it for supper tonight…LOL!

I love to experiment with different ingredients I wonder how this would taste with a Ranch dip mix instead of veggie dip?? ummmmmm maybe I will try that and let u all know how it comes out

To all: I try to keep up with who and what of sports but it is just not interesting to me. My FIL and husband are Bama fans and being a GA girl well I am a Dawg fan. When watch a bama game with the guys (ok I read they watch)every so often I pipe up with the war eagle and watch thier heads spin.
I love this recipe. we also serve in a bread bowl, anykind will do and serve the bread chunks and crakers… It is one of my favorite appetizer…

Scary isn’t it….Every time I go down Dacula Rd/Auburn there is a new building going up. I do miss the cow pasture and baseball field across from the big church (I cannot for the life of me remember the name of it) I just hope that it doe not lose that old town feel that is what I love about it.
