Stew is one of my favorite winter comfort foods. There’s nothing like enjoying a big bowl of stew with the family when the temperature drops but I find myself enjoying this dish anytime of year. You’re going to enjoy this quick and easy recipe for smoked sausage and beef stew in the slow cooker.
It takes just 15 minutes to prep this stew. Then you let your slow cooker work its magic for 4 to 6 hours. In the end, you’ll have a flavorful sausage and beef stew, overloaded with vegetables like tomatoes, potatoes, carrots, corn, and celery, to serve your ravenous family.

Recipe Ingredients
- All-purpose flour
- Salt
- Pepper
- Beef, trimmed and cut into 2-inch cubes
- Smoked sausage, sliced
- Diced tomatoes
- Golden potatoes, cut into 2-inch cubes
- Carrots, chopped
- Onions, chopped
- Celery, chopped
- Frozen corn kernels
- Beef broth
- Minced garlic
- Dried thyme
In a small bowl, combine the flour, salt, and pepper.
Dredge the beef cubes in the flour mixture and then transfer them to a 5-quart crockpot.
Add remaining ingredients to the crockpot.

Stir to combine.
Cover and cook on low 8-10 hours or on high 4-6 hours.

Recipe Notes
- For a faster cooking time, coat the beef in the flour mixture and then brown it in a skillet over medium heat with 2 tablespoons of olive oil. Drain the mixture prior to transferring to the crockpot. Cook on high for 3 to 5 hours.
- Any cut of beef works for this stew recipe. I used the pre-cut stew beef you can find at your local grocery store.
- You can also substitute the smoked sausage in this recipe for your favorite sausage. Try spicy Italian sausage if you want your stew to have a bit of a kick.
- Speaking of spice, you could also add a teaspoon of chili powder or two teaspoons of Cajun spice for more heat.
- If you prefer your stew a little thicker, you can combine 2 tablespoons of all-purpose flour with 3 tablespoons of water and stir the mixture into the crockpot 1 hour before the stew is finished cooking. This will create a thicker “gravy” for the stew.
- Instead of crusty bread, serve your sausage and beef stew with your favorite pasta, egg noodles, cornbread, or homemade mashed potatoes.
