Stew is one of my favorite winter comfort foods. There’s nothing like enjoying a big bowl of stew with the family when the temperature drops but I find myself enjoying this dish anytime of year. You’re going to enjoy this quick and easy recipe for smoked sausage and beef stew in the slow cooker.

It takes just 15 minutes to prep this stew. Then you let your slow cooker work its magic for 4 to 6 hours. In the end, you’ll have a flavorful sausage and beef stew, overloaded with vegetables like tomatoes, potatoes, carrots, corn, and celery, to serve your ravenous family.

Recipe ingredients for slow cooker smoked sausage and beef stew.

Recipe Ingredients

  • All-purpose flour
  • Salt
  • Pepper
  • Beef, trimmed and cut into 2-inch cubes
  • Smoked sausage, sliced
  • Diced tomatoes
  • Golden potatoes, cut into 2-inch cubes
  • Carrots, chopped
  • Onions, chopped
  • Celery, chopped
  • Frozen corn kernels 
  • Beef broth
  • Minced garlic
  • Dried thyme

Toss beef in flour, salt, and pepper.

In a small bowl, combine the flour, salt, and pepper.

Dredge the beef cubes in the flour mixture and then transfer them to a 5-quart crockpot. 

Add all remaining ingredients to slow cooker.

Cover and cook on low or high.

I strongly recommend serving your sausage and beef stew with some crusty bread, of course. How else are you going to soak up all the juicy leftovers at the bottom of your bowl?

Recipe Notes

  • For a faster cooking time, coat the beef in the flour mixture and then brown it in a skillet over medium heat with 2 tablespoons of olive oil. Drain the mixture prior to transferring to the crockpot. Cook on high for 3 to 5 hours. 
  • Any cut of beef works for this stew recipe. I used the pre-cut stew beef you can find at your local grocery store.
  • You can also substitute the smoked sausage in this recipe for your favorite sausage. Try spicy Italian sausage if you want your stew to have a bit of a kick.
  • Speaking of spice, you could also add a teaspoon of chili powder or two teaspoons of Cajun spice for more heat.
  • If you prefer your stew a little thicker, you can combine 2 tablespoons of all-purpose flour with 3 tablespoons of water and stir the mixture into the crockpot 1 hour before the stew is finished cooking. This will create a thicker “gravy” for the stew.
  • Instead of crusty bread, serve your sausage and beef stew with your favorite pasta, egg noodles, cornbread, or homemade mashed potatoes
  • For more flavor, add 2 sprigs of chopped fresh rosemary to the crockpot and a sprinkle of parsley when serving.

  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1 tsp pepper
  • 1.5-2 pounds beef, trimmed and cut into 2-inch cubes
  • 1 pound smoked sausage, sliced
  • 1 can diced tomatoes 15oz
  • 2-3 medium golden potatoes, cut into 2-inch cubes
  • 1 cup carrots, chopped
  • 1 cup onions, chopped
  • 1 cup celery, chopped
  • 1 cup frozen corn kernels
  • 1/2 cup beef broth
  • 1 tbsp minced garlic
  • 1 tsp dried thyme

  1. I never would have thought to add smoked sausage to beef stew. It’s a great idea for anyone cooking on a budget, especially right now when meat prices have gotten so high. Also great for when fresh meats are hard to find in my area.

  2. Question, if you dredge the meat in flour don’t you brown it before putting in crock pot? I love stews and make them often.

  3. Growing up in a house where the spice cabinet consisted of garlic, salt, pepper and cinnamon, the addition of the thyme sounds really good.
    I usually use beef or turkey sausage since the pork gives me heartburn. We make a lazy version of this and we just call ‘boiled dinner’. It consists of potatoes and carrots boiled until done then add the sausage and when it starts to split we either add cabbage wedges on top to cook or we serve it with sauerkraut. Bake a pone of cornbread, slice up a tomato and peel an onion and we are in heaven.
    Will have to try this fancy version of one of our favorites!

  4. I made this and it is really good. I took the route where after you flour the beef, I fried it in a hot cast iron skillet. It seemed to bring out the flavor.

  5. Except for the smoked sausage, these are all the ingredients I use in my own stew. Very yummy! But I’m wondering, for anyone who has already tried this, does the smoked sausage make it greasy in any way? If so, I would add even more flour to neutralize the grease from the sausage.
