Skillet Carrot Cake from Southern Cast Iron

Today, I’m thrilled to share a recipe with you that was shared in an issue from Southern Cast Iron Magazine.

Ingredients
- Crushed pineapple and coconut give this cake a delicious tropical twist.
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1 ⁄2 teaspoon kosher salt
- 1 teaspoon ground cinnamon
- 1 ⁄2 teaspoon fresh grated nutmeg
- 1 cup sugar
- 2 ⁄3 cup vegetable oil
- 2 large eggs
- 1 +1⁄2 cups finely grated carrot
- 1 4-ounce can crushed pineapple, undrained
- 1 ⁄4 cup sweetened flaked coconut
- 1 ⁄4 cup pecans chopped
Cream Cheese Frosting recipe follows
Garnish: chopped pecans
CREAM CHEESE FROSTING- 4 ounces cream cheese softened
- 1 ⁄4 cup unsalted butter softened
- 1 ⁄2 teaspoon vanilla extract
- 2 +1⁄2 cupsconfectioners’sugar
Instructions
- Preheat oven to 350°. Spray a 9-inch cast-iron skillet with cooking spray.
- In a large bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- In a medium bowl, whisk together sugar, oil, and eggs. Add sugar mixture to flour mixture, stirring just until combined. Fold in carrot, pineapple, coconut, and pecans. Spread batter in prepared skillet.
- Bake until a wooden pick inserted in center comes out clean, 30 to 35 minutes. Let cool completely.
To make Cream Cheese Frosting: In a large bowl, beat cream cheese and butter with a mixer at medium speed until smooth. Beat in vanilla. Gradually add confectioners’ sugar, beating until smooth.
- Frost cake. Garnish with chopped pecans, if desired.

Hi Christy, I don’t have a cast iron skillet. Would this work in a regular cake pan? I do, so, want to try this recipe. It sounds so good. Love your posts and recipes. Blessings to you and your family!!!

My sister in law and her husband (who introduced my husband and I to this aaaaaaamaaaaazing recipe) have done it in both a cast iron Dutch oven and a regular glass cake pan (9×13) and both came out phenomenal. My husband and I were/are so appreciative to them for sharing the recipe that we gifted them a cast iron cake pan ☺️. It’s the least we could do for sharing something soooo yummy. This is theeeeee best carrot cake I have personally ever had. My husband, who is a carrot cake fanatic said the same. We just made it at home and every time I hear My husband on the phone with either a work or personal call he’s first talking about the cake then he moves on to whatever the call is about . He’s so proud of the one I made. Thank you for making me look good to my husband, family and friends . I have shared this site already with many of them. I will Have to go and try out your other recipes ☺️.

Hi Christy, This looks like a good size recipe for a family of two. However, I am just wondering about the 4 ounce can of crushed pineapple. I don’t think there is that size. Maybe it should be 14 ounce??
I cook most everything in cast iron skillets. For folks that want to get started, they sell some nice ones at a reasonable price at Cracker Barrel.

Hey Dianne! Thanks for giving folks the Cracker Barrel tip! They often have special edition skillets, too. This cake is downsized a good bit so I think 14 ounces of pineapple might be a little overwhelming. I wonder if they are talking about a snack size can of pineapple or maybe jus half of an 8 ounce can? I would love that as I tend to want to eat some anyway! I double checked the recipe as sent to me by Hoffman and it is 4 ounces so either way, you get to have a few bites 🙂
