Things are so busy nowadays for families, for single people, for parents, and even for kids. We have schedules, people to take care of, meals to shop for and cook, chores, errands, meetings and appointments, bills to pay, and fewer and fewer precious hours of sleep. If you’re like me, everything seems to be coming at you all at once most days. Of course, my ADD doesn’t help matters any, adding an extra dose of clutter into my already packed thought process (and for the record, ADD is a gift, *not* a disorder, but that’s a story for another day). So today, I’m going to bring you a recipe to add a little bit of simplicity to your life. Today, we’re just going to take a collective deep breath, exhale, and then make a simple supper.
As a matter of fact how about we make a simple supper and then in my next few posts I’ll show you how to make a simple lunch and breakfast as well. Because life can be simple, because life is simple – if we just take time to breathe and allow it to be.

And now let me tell you how I came about this recipe, courtesy of Kraft foods.
Enter my beloved iPhone. ~sighs contentedly~ I’ve had one of these since they first came out. Back in the day I had a stint ghost writing tech articles and two of my assignments were to write about the upcoming iPhone. I used the money I made on those to – buy an iPhone. It seemed fitting. I’ve had one ever since. I don’t have a lot to say about AT&T (bless their hearts)…but I love my iPhone.
This is the new Kraft Foods app known as iFood Assistant. It allows you to browse recipes by category, read reviews of each recipe, post your own reviews, and automatically make a shopping list for the recipes you choose.
On a particularly busy day, this one looked right up my alley.
It had great comments and was quick and easy to prepare with simple ingredients. Count me in!
Having my phone with me meant I had my shopping list all made out, too. I love how you can sort your shopping list by recipe because I had chosen a few other things to add to my recipe box but didn’t want to shop for them at the time. This is a really handy little app. Now lets get on to the cooking part, which won’t take long at all. I had this made from start to finish in just a few minutes.
I made this on a day where it seemed everyone except for Katy Rose had a deadline. They were headed in and then right back out the front door. One of these days I’m going to get one of those revolving doors on the front of Bountiful….
You’ll need: Salsa, canned whole kernel corn, black beans, flour tortillas, chicken , and your favorite cheese.
*I opted for canned which is completely unlike me. I usually keep leftover shredded chicken or turkey in the freezer for recipes like this.
I also left out the green onions because more than one person in my house would balk at them. Personally, I love them. But I also love brussel sprouts, squash, and sauerkraut. I’m definitely in the minority on all counts.
Open all of your cans, drain them, and just set them by your stove.
Place a flour tortilla in a medium skillet and sprinkle some chicken and corn over the top.
Top that with some black beans.
And a few spoonfuls of salsa.
Now add some cheese.
And fold the other side over.
Brown this lightly on both sides until the cheese is melted. I do this on medium heat for a few minutes on each side.
Cut that in half and serve with salsa or sour cream if you like.
We inhaled these, they were so good. I whipped up more for my lunch the next day!

These look terrific. Can’t wait to try them. Am vegetarian, so will omit the chicken.
These sound really good. Unfortunately, my husband is diabetic, so I will leave out the corn and beans due to the carbs. I like the suggestion of adding the green chiles, though, and will serve them with extra salsa and sour cream.
Someone mentioned making them in a cast iron skillet. I have a glass top stove, so don’t use mine except in the oven. I sure miss using it for things like this!

Oh, I have made these numerous times. I can’t remember where I found the recipe, but do the same thing – with grilled or sauted chicken. I have never used canned, but would not rule it out in a pinch!
These look great! We will definitely be making these with the homemade salsa my Darling Hubby grew and put up last fall. Thanks for giving new life to dining during these gray days of Ohio winter!
