I love ham salad and this is my absolute favorite recipe for it! It’s so easy to make and is the perfect way to use leftover ham. What else do you need to make the perfect ham salad sandwich? Spicy brown mustard, sweet pickle relish, mayonnaise, boiled eggs, and some freshly cracked black pepper.
Ham and Cheese Sliders

Christy, we had a wonderful Easter as well. We celebrated our Easter “dinner” on Saturday, and had leftovers on Sunday after church. I made your easy peasy ham glaze, and it was wonderful! We also had green bean casserole, your hash brown casserole, which my husband LOVED!, deviled eggs, sausage stuffing balls, your jordan rolls, and easter cake. It was a great evening!
I wanted to know if you’ve ever heard of red eye gravy? I had it growing up, but have yet to find the “right” recipe to make it…it had a little bit of a kick, and we had it with mashed potatoes and roast.
I cooked Easter lunch for 20+ people..ham and all the fixins. My 83 year old daddy gave the blessing and reminded us all of what Easter stands for and to remember all our blessings. It was our first Easter without momma. I found out that my daughter’s mother in law is a big Christy Jordan fan too. We compared notes and perused your cookbook together. Best of all we had the family and was very blessed.
First of all, the absolute highlight of our Easter Menu was your daddy’s favorite coconut cake, which was the first recipe I have tried from your new cookbook (which I made my hubby make a second trip to the bookstore to acquire on a recent visit to Atlanta!). The cake is to die for, and I can understand why it is your father’s favorite! So easy, and it is just as yummy today! Other items on our menu: A spiral-sliced hickory smoked ham, Hawaiian Salad, yeast rolls, broiled asparagus and my grandmother’s sour cream potato salad. Hope you and yours had a wonderful Easter, too.
