Substitute the chicken in this fried rice recipe with ham and you have yourself a quick and easy ham fried rice dinner.
Hoppin’ John
This may be a vegetarian version of Hoppin’ John, another Southern classic. But I’ve included notes where you can add either the ham bone, , or pieces of ham to the black eyed peas.

Love this stuff and my bean and makes it super easy. It calls for a smoked turkey leg, but substitute that for the ham bone and you’re good to go.

We had a wonderful Easter dinner which included: Baked ham, deviled eggs, spinach and artichoke salad, hashbrown casserole, congealed salad (your recipe!) and lemon bars (also your recipe!), green beans, mashed potatoes and coconut cake.
Really good ideas posted here – kinda wish I’d have made ham….. Grilled flank steak was excellent though, but no leftovers.
The hit of our dinner was your butter peanut bars. My nephew kept saying “OMG” and I had to fight to have any for lunches today!. Also used your cola glaze on the ham, mashed tators, green beans, mac and cheese, rolls and those little yam patties (i adore them).
I broke with my usual tradition of baked ham and roasted a turkey. The reason was my grandaughter won a turkey at her school in the annual turkey trot races. I had already purchasedd a turkey at Thanksgiving so told her we would save it for Easter and even though I wanted ham- I am a nana of my word. I want her to know she can always believe and trust her nana.
We had Ham, Mashed Potatoes, Corn, Green Beans, Pineapple Casserole, Homemade Rolls with honey butter and dessert was Peanut Butter Pie. I’m on WW’s so didn’t make a ton of food this time 🙂
oops, forgot we had Mac and cheese also!
We had Ham, Gourmet Potatoes, Butter Beans, Cabbage Casserole;. Green Beans, Corn on the Cob, Deviled eggs (my niece calls them “doubled eggs”….she has since she was toddler and now that she is 8, we have tried to get her to change to devil eggs but she will probably always call them “doubled eggs” ), Pistachio Salad, Rolls, Strawberry Punch Bowl Cake and, OF COURSE, sweet tea!
We had your baked ham with easy glaze, candied baby carrots, mashed potatoes and butterfinger cake. A wonderful Easter meal thanks to you!
