I hope you had a wonderful Easter holiday. We had a great day spent together as a family complete with decorating Easter Eggs, a lovely walk in nature, and a beautiful church service. Oh and of course we finished it off with  a wonderful Easter meal (starring ham, of course!).

I love ham salad and this is my absolute favorite recipe for it! It’s so easy to make and is the perfect way to use leftover ham. What else do you need to make the perfect ham salad sandwich? Spicy brown mustard, sweet pickle relish, mayonnaise, boiled eggs, and some freshly cracked black pepper.

  1. We had: ham, fried chicken, macaroni and cheese, green beans, candied yams, rolls, a baked ziti with sausage, peppers, and feta (not really traditional or southern, but it was delicious!), strawberry shortcake and banana pudding! It was such a beautiful day, and wonderful meal!

    My ham was so tender and moist cooking it in an oven bag. I would do that again. Clean up was a breeze since all the drippings were contained in the bag. Nice.

    What a wonderful day spent with family.

    The day started with our Sanctuary Choir presenting our Easter Musical where 5 people came to know Jesus as their personal Saviour, and 3 children coming to Jesus in Children’s church. Praise the Lord!

    WE HAD A HAM THAT I COOKED IN THE CROCK_POT,– SCALLOPED POTATOES, VEGGIE PASTA SALAD ,PEAS , RED BEET EGGS ( PA. DUTCH RECIPE) JORDON ROLLS &&&&& ICED SWEET , & FOR DESSERT WAS PEANUT BUTTER EGGS , HOME MADE OF COURSE,!!!!!
    WAY TOO MUCH FOOD BUT SOOOOOOOOOOO GOOD !!!

  5. Two recipes that I have heard of, but never made myself, for leftover ham are ham and dumplings and ham pie. Do you do these? If not, I’d love you to develop recipes for them and post, particularly for the ham and dumplings. I remember eating them from the Sweet Sue can as a child and really liked them, so I know they would be much better homemade. Thanks!

  6. We had pulled pork, vinegar slaw, Jordan rolls, steamed broccoli, fresh fruit and veggies, and lemon chess pie for dessert. Thank you for the recipes. This was the first time making the Southern Plate ones and they turned out great.

  7. I cooked ham, chicken and dressing, giblet gravy, chicken spaghetti, macaroni and cheese, sweet potato casserole, green bean casserole, fried corn, five cup salad, strawberry shortcake, chocolate pie, and lemon ice box pies.
