Recipe for Caprese Salad with Chicken and Avocado

If you are looking for a healthy meal that has good fats, proteins and is low carb that will wow your friends and family, you came to the right place. This fresh meal with the balsamic dressing makes eating healthy worthwhile every time.
Ingredients for the Salad:
- 2 cups Romaine lettuce (You can use whatever lettuce you like or a traditional caprese salad doesn’t have lettuce but instead serves the tomatoes and mozzarella with fresh basil and tomato and mozzarella slices. But this is the Southern Plate version so we added some more greens)
- 1/2 cup Cherry tomatoes, halved
- 1 Avocado, sliced
- 2 -3 Fresh mozzarella pearls
- 4 oz. Chicken breasts, sliced (I cooked my chicken breasts with a bit of garlic)
- Fresh torn basil
Ingredients for the Homemade Balsamic Honey Dressing
- 2 tablespoons honey
- 1 tablespoon dijon mustard
- 1/2 tsp salt
- 1/2 tsp fine black pepper
- 1 1/2 tsp garlic minced
- 1/4 cup balsamic vinegar
- 3/4 cup extra virgin olive oil
You can use whatever lettuce you like or none at all! If you are making a traditional Caprese salad, it doesn’t have lettuce but instead serves the tomatoes and mozzarella with fresh basil and tomato and mozzarella slices. But this is the Southern Plate version so we added some more greens to make a meal of it.
After you cook your chicken breast arrange it on the plate how you like it. I went ahead and sliced the chicken breast after it cooled and arranged as seen.
Add your avocado, mozzarella, cherry tomatoes, and torn basil throughout or in a bunch.
Now on to the Balsamic Honey Dressing…
In a small mixing bowl, whisk together the honey, balsamic, mustard, salt, pepper and garlic.
Add the oil and whisk thoroughly to combine. Continue whisking until the dressing is fully emulsified.

Shake well then drizzle on your salad.
Store in a jar with a lid and refrigerate. Shake well before serving.

What is a traditional Caprese Salad?
Caprese salad is a simple Italian salad, made of sliced fresh mozzarella, tomatoes, and sweet basil, seasoned with salt, and olive oil. It is usually arranged on a plate in restaurant practice.
Our version today didn’t have as much basil, and added chicken and avocado to make this more of a meal than a side.
Ingredients
- 2 cups lettuce We used romaine but use whatever you like.
- 1/2 cup cherry tomatoes halved
- 1 avocado sliced sliced
- 2-3 oz fresh mozzarella
- 4 oz chicken breasts cooked and sliced
- Fresh torn basil
Balsamic Dressing
- 2 tbsp honey
- 1 tbsp dijon mustard
- 1/2 tsp salt
- 1/2 tsp black pepper finely ground
- 1 1/2 tsp garlic minced (one large clove)
- 1/4 cup balsamic vinegar
- 3/4 cup extra virgin olive oil
Instructions
- Cook chicken breast. I did this in skillet on medium heat with garlic. Make sure they are cooked through. Let cool and slice.
- While chicken is cooling arrange salad on plate
- Add mozzarella and cherry tomatoes as well as torn basil and avocado
- Slice chicken and arrange on plate
Balsamic Honey Dressing
- In a small mixing bowl, whisk together the honey, balsamic, mustard, salt, pepper and garlic. Add the oil and whisk thoroughly to combine. Continue whisking until the dressing is fully mixed together and drizzling consistency. Pour into mason jar with lid.
