What You’ll Need to Make Quick & Easy Beef Stroganoff:

ingredients for quick and easy beef stroganoff

Ingredients:

  • Cream of Mushroom soup (you can use fat free if you like)
  • egg noodles (you can also use spaghetti, rice, or other noodles)
  • ground beef
  • milk (just a little bit!)
  • pepper

**Meal Prep Tip: I always cook up batches of ground beef and put them in little baggies in the freezer when I’m meal prepping! This allows me to have ground beef ready to go whenever I want to use it to cook, so that cuts out an extra cooking step right there.

How to Make Quick & Easy Beef Stroganoff:

brown the ground beef

Brown your ground beef (if you don’t already have some ready to go!). Use this amazing ground beef chopper tool to make this step so easy!

place ground beef, soup, and milk in a pot

Place your cream soup, milk, and ground beef in a sauce pot.

add pepper to stroganoff

Add pepper to taste. I like a good bit of pepper in my beef stroganoff but you can add pepper to suit your taste. Remember, your guests can always add more pepper but they can’t take it out so it is best to under season if cooking for someone you’re not used to cooking for.

mix together ingredients and cook until bubbly

Stir that up good and cook over medium heat until nice and bubbly.

cook egg noodles according to package directions

This won’t take long at all so go ahead and get your noodles cooking according to the package directions, and get your rolls a-browning! I am using brown and serve rolls for this but Jordan Rolls go great, too, if you want to make homemade!

serve over pasta

Serve the quick & easy beef stroganoff over egg noodles. You can also use rice or potatoes or whatever pasta you have on hand.

serve with a roll

Serve with a roll on the side and enjoy!!

Storing Quick & Easy Beef Stroganoff:

Can I make it ahead of time?

Absolutely! Quick & easy beef stroganoff can be made ahead and stored in the fridge for 3-4 days. Just reheat it on low heat to prevent the sauce from separating.

Can I freeze leftovers?

Yes, beef stroganoff freezes well! Just allow it to cool completely, transfer to an airtight container, and freeze for up to 3 months. Thaw in the fridge overnight and reheat gently on the stove.

  4. My family grew up on this. But ours was an even cheaper to make version. While raising our 5 kids sometimes there was way more gravy than meat. I brown my hamburger and drain. Sprinkle the top well with flour and salt and pepper. Stir and brown the bottom of the pan then add water and stir continuously until it is thickened and bubbly. My college kids ask for this when they come home. We like it over mashed potatoes best

    1. I made this when my kids were still home–but we didn’t have a fancy name for it–it was just ground beef and gravy. Sometimes had it w mashed potatoes, sometimes rice, but almost always accompanied with whole kernel corn and a pan of sweet cornbread.

Quick quick meal for a busy mom with even busier children.

  5. THIS IS ALSO MY HUSBANDS FAVORITE….I do add a package of dry onion soup mix in with the soup & milk. We like it best over mashed potatoes!! SUPER YUMMY!!!!!!

  6. Hey Christy- This sounds like another winner!! I make a similar version of beef stroganoff. It has one can of cream of mushroom soup, and one can of cream of celery. You brown the meat with some sliced onion (drain afterwards), then add each can of soup and a half cup of water. After heated through, stir in a cup of sour cream. A little salt and pepper is really good in this, as well as some dried dill. My three grown kids request this when I’m visiting, and also have been known to make it themselves (two are married)! Thanks for everything, Christy <3
