What You’ll Need to Make Quick & Easy Beef Stroganoff:
Ingredients:
- Cream of Mushroom soup (you can use fat free if you like)
- egg noodles (you can also use spaghetti, rice, or other noodles)
- ground beef
- milk (just a little bit!)
- pepper
**Meal Prep Tip: I always cook up batches of ground beef and put them in little baggies in the freezer when I’m meal prepping! This allows me to have ground beef ready to go whenever I want to use it to cook, so that cuts out an extra cooking step right there.
How to Make Quick & Easy Beef Stroganoff:
Brown your ground beef (if you don’t already have some ready to go!). Use this amazing ground beef chopper tool to make this step so easy!
Place your cream soup, milk, and ground beef in a sauce pot.
Add pepper to taste. I like a good bit of pepper in my beef stroganoff but you can add pepper to suit your taste. Remember, your guests can always add more pepper but they can’t take it out so it is best to under season if cooking for someone you’re not used to cooking for.
Stir that up good and cook over medium heat until nice and bubbly.
This won’t take long at all so go ahead and get your noodles cooking according to the package directions, and get your rolls a-browning! I am using brown and serve rolls for this but Jordan Rolls go great, too, if you want to make homemade!
Serve the quick & easy beef stroganoff over egg noodles. You can also use rice or potatoes or whatever pasta you have on hand.
Serve with a roll on the side and enjoy!!
Storing Quick & Easy Beef Stroganoff:
Can I make it ahead of time?
Absolutely! Quick & easy beef stroganoff can be made ahead and stored in the fridge for 3-4 days. Just reheat it on low heat to prevent the sauce from separating.
Can I freeze leftovers?
Yes, beef stroganoff freezes well! Just allow it to cool completely, transfer to an airtight container, and freeze for up to 3 months. Thaw in the fridge overnight and reheat gently on the stove.

I love it! Quick and so easy to make!
I love beef stroganoff and learned to make mine from the early 70’s edition of the Betty Crocker cookbook but it was not this easy. It took round steak, mushrooms, onion, beef broth, catsup, sour cream but it was wonderful:) Now I take the easy route and use stew beef, trimmed of fat, with a pack of McCormick’s beef stroganoff mix for the crockpot. Add sour cream at the end and we love it best over mashed potatoes, too. No matter how it’s made, if it’s from the heart, it’s good. Christy, I love your stories. Many of us here have grown up hard but never knew we were poorer than Job’s turkey as everyone else was to. Still face a lot of daily trials and tribulations as time goes on but thank goodness for faith, love of family and friends and blessings from above. Keep us smiling:)
Thank you for the memories…takes me back to my childhood, when you could play for hours outside and not worry about anything but having fun. Were parents were not too worried about you being out of their site because there always seemed to be some other parent watching you. It that other parent corrected you, you had better listen.
I have made the ground beef recipe many times, but my family love it with onions and garlic over rice. In fact I think that is what I am going to make tonight, was going to make hambergers but this sounds better
Love your site and thank you for all the great recipes..
My mum has made this dish for years. She calls it “Slop”.
I LOVE your story, as always! I don’t know if you listen to country music, but even if you don’t, your story reminds me of the precious song by Miranda Lambert, “The House that Built Me”. If you are not familiar with it, you must take a listen.
My husband and I love Beef Stroganoff. I use 8 ounces of sour cream in place of milk, light of course, ha ha! If my meat is not previously cooked, I do cut up two onions and sautee them with my beef and that makes it triple yummy!
Anxiously awaiting the apple cake with caramel buttercream icing, oh my! Hugs!
It looks alot like hamburger gravy. When we were little we had it at school, my brother came home and ask Mom to make chocolate chip gravy, she had to call one of the cooks to find out what he was talking about. We still laugh about it:) It’s always been one of my daughters favorites. Thanks for all the wonderful recipes.
We have been eating this for years, every time I fix it for my family it brings back some of my childhood memories. I love it. Thanks for sharing so many of your family memories, sounds like you had a great childhood!!! My mom was a single parent raising 4 children and she did a great job also and put in to us the right/wrong morals. She always said she wished she could give us more, but she gave us the best – her love, time (when she wasn’t working) and affection! I think God all the time for her!!!
