How to Make Southern Chicken Stew
In a dutch oven, cover the whole chicken with water and cook over medium heat until it the thickest part of the breast registers 165°F (74°C) on an instant read thermometer. When done, remove the chicken from the broth and set it aside to cool a bit. Reserve broth. You can use boneless skinless chicken breast for this recipe, just add some chicken bouillon cubes to your water to make sure your chicken broth is rich enough.
Peel and dice the potatoes and onions.
Add diced onions and potatoes to the reserved broth. Cook until the potatoes are tender.
While the potatoes are cooking, remove the chicken meat from the bones and shred.
When the potatoes are very soft, remove approximately a coffee cup’s worth. With a fork, mash these potatoes in the cup.

My grandmother and mother made chicken stew similar to this except with tomato soup and condensed milk. I’ve looked for a recipe like there’s but can’t find one. I remember where I’m from in South Carolina that seemed to be the standard recipe. Have you come across one like this?
I’m also from SC and have searched the web with no luck, but this is how I make what I know as:
Red Chicken Stew
Simmer 4 to 5 large skin on breast halves barely covered in water Skim foam as needed Remove chicken and cool; skin, debone and shred as you like
Meanwhile cook 5 large peeled, cut up potatoes and 3 large coarsely chopped onions in broth until potatoes are tender
Add 1 can each undiluted evaporated milk and tomato soup and 1 to 1.5 teaspoons of ground red pepper to broth Stir Add shredded chicken Simmer 30 minutes, gently stirring often so as not to break up potatoes Add more regular milk, if needed

Need to know how much stew this recipe makes
I make this soup all the time! I have tweaked it over time. I use tomato paste instead of canned tomatoes, i add butter beans and or black eye peas, and sprinkle red pepper flakes in it, I also add billions cubes. I make it and take it to share at work. This is the one thing I can cook and there are no left overs!
