This cheesy hash brown casserole is a copycat recipe, as I love the version served at Cracker Barrel. If you’re the same, you’re going to love this recipe as much as I do. It’s so easy to make this casserole, which is so cheesy and creamy – the ultimate comfort food combination! It features cheese, shredded hash browns, and cream of chicken soup. All you have to do is mix the ingredients together, place them in a casserole dish, and bake. Delicious and easy, what’s not to love?

This casserole is also a very versatile recipe (like you needed another reason to love it). We have this as a side dish at all our holiday dinners, family reunions, and any other time we can come up with an excuse to make it. It could also be a great breakfast casserole too and the recipe is simple enough to add to the regular dinner rotation.

Add seasoning to mixing bowl.

Preheat oven to 350 degrees

Dice onion and place in a large mixing bowl along with melted butter, cream soup, and seasonings.

Stir this up with a large spoon until well combined. 

Add cheese to mixing bowl.

Add in cheese.

Add hash browns to mixing bowl.

Add frozen hashbrowns (still frozen or lightly thawed is fine). 

Mix ingredients.

Stir all of this up until well mixed. 

Casserole ready to be baked.

Spread this potato mixture into a lightly greased 9×13 pan and bake in the oven at 350 for 30 minutes, or until bubbly.

Storage

Ingredients

  • 2 lbs frozen shredded hash brown potatoes
  • 1/2 cup butter melted
  • 1 can cream of chicken soup or one recipe of homemade cream soup
  • 1/2 cup chopped onion
  • 2 cups grated cheddar cheese
  • 1/2 teaspoon pepper
  • 1 teaspoon salt

Instructions

  2. why are you using cornflakes crushed and butter for top how does it taste and add to it . this will be my first time making this and want to know good tricks

  3. I prefer the cubed hashbrowns over the shredded but have made both ways. I always use some sour cream in mine and have also used cream cheese, just good whichever way you make it. Also, like crushed cornflakes mixed with melted butter to put on top, also have used Ritz crackers or even potato chips. A good throw together casserole.

  5. Hey Christie, decided to make this for my Easter dinner tomorrow. The “southern style” (said so on the bag) hash browns I picked up from my local store, Dominick’s (Safeway owned) weren’t shredded but diced small. I’m sure it will still be just as delicious but can’t figure out why those taters weren’t shredded.

      1. I never really paid attention to the wording on the package but after I read this post I had to look and see what it said. My Kroger brand hash browns say “country style”. This made me laugh because I am from Ohio but my husband is Southern and it is a common misconception up here that all southerners are from the country! My husband grew up in the heart of Atlanta but everyone assumes he grew up in a dirt shack in the middle of a cotton field! Some stereotypes crack me up.

I make this lots of times when I have family in..everyone likes it…I love the southern style hash browns too. they are also great for breakfast.YOU CAN ALSO TOP WITH OTHER CEREALS ON TOP IF YOU DON’T HAVE CORN FLAKES OR BREAD CRUMBS JUST BE SURE TO FINELY CRUSH THEM ..I HAVE USED CRACKERS CRUMBS TOO.JUST NOT SWEETENED CEREALS.
