How to Make Coconut Lime Cookies:
Combine the butter and sugar in a mixing bowl.
Cream the butter and sugar until fluffy, then add the eggs and vanilla. Mix until well combined, and then set it aside.
In another bowl, whisk together the flour, salt, and baking powder.
Add the dry flour mixture into the wet mixture and mix until a cookie dough has formed.
Using a ¼ cup measuring cup, scoop the dough out and place it onto an ungreased cookie sheet.
Using a measuring cup, or the bottom of a glass, press into the dough to flatten before baking.
They should look like this before going into the oven! Bake them for 10-11 minutes at 350 degrees – until the centers are no longer shiny.
Cool on the cookie sheet for 5 minutes and then move to a cooling rack. Cool completely before frosting.
While they’re cooling, let’s make the homemade frosting!
In a large bowl, combine the softened butter and powdered sugar. Using a hand or stand mixer, mix the powdered sugar and butter until a normal frosting consistency has formed.
(If the frosting has trouble coming together, add 1 TBSP of the coconut cream and continue mixing.)
Add the remaining coconut cream and extract, and mix until well combined.
Your frosting should look like this when it’s all done! Spreadable and ohhh-so-delicious!
Frost each cookie and set them aside for the frosting to form a cast. Cover the Coconut Lime Cookies and chill them until you’re ready to eat.
While they chill, cut lime wedges to have ready to squeeze onto the cookies.
When ready to eat, squeeze a wedge of lime onto the cookie for that twisted sugar-lime coconut taste. Serve with the lime wedge on the top for maximum aesthetic appeal!

These cookies are amazing. I squeezed 1/2 lime directly into the frosting. That made leftover frosting more user friendly. We are only 2 people in the house, so I had lots of cookies. I froze them and get out a few at a time. They are very good cold.
