We have these coupons that we bought as part of a fundraiser for something or other that my niece was involved in. They are Domino’s pizza coupons so while I am writing my book, we’ve started getting carryout pizza on Saturday nights. You know, big weekend plans and all that…
Well, the past few times my husband has gone after our little half-price pizza, he has come home with a tiny box of this cheesy pull-apart chicken stuff sprinkled with bacon. Apparently, this has become his weekly treat. I gotta admit, it is pretty dang good. Seeing how he has grown to love it so much, I decided to make my own version. And that is what I am sharing with you today.
As with most homemade things, you get twice as much for half the price, which is always a plus! So without further ado, here is your Cheesy Bacon Pull-apart chicken recipe!
Recipe Ingredients:
- Shredded Mozzarella
- Any type of bacon you like
- Shredded Parmesan
- Garlic Powder
- Chicken nuggets of some kind*
A Note About The Chicken
*You can make your chicken bites from scratch (maybe make this recipe the night before and double it so you have extras in the fridge) or buy them in the store to save money. Any type of chicken nugget or popcorn chicken will do, but I went for Chicken Breast Chunks so we’d have that wonderful bite of actual pieces of non-formed chicken.
Technically, the Domino’s version of this has tomatoes in it somewhere. However, I’ve never tasted or spotted any form of tomatoes in it. I don’t know if my Domino’s leaves this out, if my eyesight and taste buds have joined together and decided to fail me completely, or if the aliens are eating all the tomatoes out of our order before Ricky gets it home, but I’ve never spied even the tiniest tomato particle. So I made this cheesy bacon pull-apart chicken recipe based on what I have tasted.
Arrange your chicken chunks on a baking sheet as close together as you can, but not on top of each other. Bake them in the oven at the temperature and time listed in the package directions.
If you are using leftover chicken that you made the night before (these chicken strips would be excellent for that — don’t fret over them being strips vs. nuggets), just place them on a baking sheet and put them in at 350 for about ten minutes.
Remove from the oven and give them a very generous sprinkling of mozzarella and parmesan. Then, sprinkle garlic powder over all.
Top with turkey bacon.
Return to oven for about 5 minutes, or until cheese is fully melted.

- 3-4 strips turkey bacon crumbled (You can also use turkey bacon bits from the grocery store if you like)
- 1 teaspoon garlic powder
Instructions

Somehow I missed this recipe when it first came out. Saw it yesterday and knew I had to try it. I made it today from memory, but forgot the bacon. How could I forget that??? My daughter and granddaughter came over for supper and they loved it. So yummy! Served it as a “side dish” to go along with a baked potato bar. Had orange cottage cheese Jell-O salad for dessert. Rather lopsided nutritionally, but I think we will live to eat our greens tomorrow!

I read your sweet blog and save many of your recipes, but seldom comment. This morning, your talk about your son has touched my heart. My daughter grew up ovenight too, it seems. When I think in my mind of her, I still see her as 4-5 years old, no more than 8-10. Somehow she is going to be 18 in April, graduating high school, has a wonderful part-time job at a local bank, and a sweet boyfriend. I struggle every day with knowing my days are limited with her. Seems like a few months ago, I was wondering if she would ever be on her own…..
The depression and sadness are truly real, but the pride and joy at knowing that a child you have raised has turned out okay. Sure, there have been bumps and rough spots (plenty of yelling and silent treatment scenes as well), but I am so very proud of the young woman she has become. It is hard to transition from mother to more of a friend role with her, but I see that beginning to develop.
Sorry for the long post, but I just wanted to share my heart with you. Enjoy your time with your two amazing kiddos as long as you can. It passes far too quickly.

This made me cry! I have been following Southern Plate since ’08 or ’09, and it really is hard to believe how Brady has grown from a little boy to a wonderful young man during these years (which seem to have flown by). My own “little boy” just turned 11 1/2 and this reminds me to cherish and enjoy every moment. It also makes me feel good about what is soon to come. It’s refreshing to hear positive words about the teenage years. Be proud, mama- you done good! 😉

How could anyone complain about your stories?! That’s like complaining about birthday presents or vacation days! Sheesh, people will find any reason.
Anyways, I just wanted to tell you how sweet and respectful it is of you to be so careful about your Brady posts. Although he obviously doesn’t try to hide anything from you (as shown in your post today), you’re giving him the space and privacy teenagers need. You’re such a thoughtful mother, and I’m sure he appreciates it.
