Many of you have written that you are having a difficult time finding Pioneer Baking Mix in your local Wal Marts. I spoke with my extremely kind contact at Pioneer and she says they are working on getting it back in all of the stores. If you’ll just let the manager know you want it, they can get it in for you!

Also courtesy of Pioneer Brand, here is a recipe and photo for ya! I haven’t got to try this yet so y’all let me know if you do! I hope to make it this week because it sure looks good (I’m making it for supper one night!).

Skillet Breakfast Casserole

1/2 lb. sausage, cooked and crumbled
1 Tbsp. vegetable oil
1 lb. tater tots
1 1/2 cups cold water
1 package Pioneer Peppered Gravy Mix
2 large eggs
1 1/2 cups shredded cheddar cheese
1 Tbsp. minced chives

PREHEAT oven to 350ºF.

PREPARE sausage, set aside.

HEAT oil in a 10 to 12-inch oven-proof skillet.

BROWN tater tots 4 minutes.

REMOVE from heat; sprinkle on sausage.

WHISK gravy mix into water.

WHISK in eggs.

POUR evenly over tater tots.

BAKE 25 to 30 minutes or until a toothpick inserted is clean when removed.

SPRINKLE on cheese, bake 3 minutes or until melted.

CUT into wedges.

GARNISH with chives.

YIELD: 4 servings.

  1. I have got to go to Walmart and see if I can find Pioneer Brand products. Hubby would love this for breakfast!

  2. I bought the Pioneer baking mix because you blogged about it when you had the recipe for the oatmeal cookie bars. I was able to find it at Kroger here in central Georgia. I love it for making biscuits in the morning. Not quite my grandma’s but my husband is happy (and they are much more figure friendly).

Somewhere around my kitchen… (hiding in the back of one of my cabinets, or prehaps on the bottom shelf of the pantry…) I have a cast-iron skillet that I inherited from my mom… I can honestly say that I’ve never used it, but I couldn’t bear the thought to pitch it or pass it on because of the fond memories and sentimental value it has.

    Sausage, Taters, Eggs, Cheese, Peppered Gravy… oh my! My mouth is watering… my lips are smacking… I can hardly wait for Saturday morning breakfast time to get here!

    I think this dish will be the perfect reason to hunt for that skillet, hunt… err… I mean ‘shop’ for the ingredients I am missing, cook, and share stories with my three young boys about the meals that I ate from that very skillet. (They love to hear stories about Grandma, especially when nibbling on a tasty treat!)
