Many of you have written that you are having a difficult time finding Pioneer Baking Mix in your local Wal Marts. I spoke with my extremely kind contact at Pioneer and she says they are working on getting it back in all of the stores. If you’ll just let the manager know you want it, they can get it in for you!
Also courtesy of Pioneer Brand, here is a recipe and photo for ya! I haven’t got to try this yet so y’all let me know if you do! I hope to make it this week because it sure looks good (I’m making it for supper one night!).
Skillet Breakfast Casserole
1/2 lb. sausage, cooked and crumbled
1 Tbsp. vegetable oil
1 lb. tater tots
1 1/2 cups cold water
1 package Pioneer Peppered Gravy Mix
2 large eggs
1 1/2 cups shredded cheddar cheese
1 Tbsp. minced chives
PREHEAT oven to 350ºF.
PREPARE sausage, set aside.
HEAT oil in a 10 to 12-inch oven-proof skillet.
BROWN tater tots 4 minutes.
REMOVE from heat; sprinkle on sausage.
WHISK gravy mix into water.
WHISK in eggs.
POUR evenly over tater tots.
BAKE 25 to 30 minutes or until a toothpick inserted is clean when removed.
SPRINKLE on cheese, bake 3 minutes or until melted.
CUT into wedges.
GARNISH with chives.
YIELD: 4 servings.

Mmmmm This Sunday!
I love these recipes. Take them to a breakfast potluck at church every month. This one is perfect. Coulld sure use the goodies.
The next potluck is this weekend.

PIONEER products are a staple in our household. Their baking mix is 1 of my secrets to fabulous chicken tenders & delish breakfast chops. And if it weren’t for their wonderful gravy mixes, my family would be up a creek since any kind of gravy is the one dish I just cannot master. I think I’ll try this breakfast casserole this weekend.
This sounds great for a Saturday morning brunch after a relaxing “sleep-in.”
This would be a great breakfast for dinner recipe!
I have been looking for the Pioneer making mix in my area of VA. but no luck so far. I will talk to the manager at WalMart the next time I go there. I have been using the Pioneer gravy mix for a long time and it is delish. I get that at our Food Lion grocery so will ask the manager about the baking mix there also.
