Recipe Ingredients

  • 500g of boiled pasta of your choice
  • 200g block of feta cheese (drained)
  • 400g of cherry tomatoes
  • 6 cloves of peeled garlic
  • 3 tablespoons of extra virgin olive oil (original olive oil will work just as well too)
  • Seasoning: 1 teaspoon chili flakes, 1 teaspoon paprika, and 1 teaspoon garlic powder
  • 1 cup of reserved pasta water (the salted water used to boil the pasta)
  • 1 cup of fresh basil

In an oven tray, put together the tomatoes, garlic cloves, olive oil, and seasonings. Mix well to coat the tomatoes.

Add the feta cheese block on top. Season extra according to taste (avoid salt as the cheese is already very salty), and drizzle some olive oil over it.

Bake in the pre-heated oven (220ºC) for about 35 minutes.

(Meanwhile, boil the pasta according to the package instructions until al dente, drain, and save a cup of pasta water).
