A few weeks back I posted about my back to school resolution and how it has become a challenge in the middle of my ever growing schedule to find time to make supper each night. I’ve employed some creative solutions such as cooking up meals ahead of time, freezing, and using my slow cooker more. I’ve even tried ~takes a breath~ planning. I hate that part of it. I’m really a fly-by-the-seat-of-my-pants gal when it comes to supper. I like to just wait and see what I’m in the mood for when it comes time to cook. I also don’t enjoy cooking ahead as that takes the fun out of getting to cook each night for me, but I’m working on developing new habits in order to be able to adjust to a more demanding work schedule and still keep family the top priority – and it’s working.

  1. I am making sandwiches the night before (putting lettuce and tomato slices in separate bags), yogurts on top of the sandwiches. In the bags or boxes I have a granola bar or whatever kind of snack they want (I make my own) and napkins ready to go. It is making a difference. Dinner time is still a struggle. Trying to get those organized. Slow cooker recipes you have do help make it amazing!

  2. One thing that has always tripped me up is what to fix!!!! And no one in my household has a clue either, until I fix something they didn’t really want to have or it’s too close to the last time we had it. So, I’ve started jotting down what we had for dinner on my calendar, starring those that were a “hit”, etc., to remind me of meals we love, when’s the last time had it, and of course, trying new dishes, especially the slow cooker ones that show up on Southern Plate. The has helped me with the “What to fix for supper tonight” question and even pre-planning.

  3. i have started making meals ahead of time since i now work in the evenings and am not home to cook. It has worked great i do casseroles or i have the meal precooked and let dh do the rest for the dinner that way the kids have a variety and not just having casseroles or crockpot meals. I also make desserts but not every night for some nights they meal is just enough. Thanks for some having this blog it has been a tremendous help for snacks and kid friendly meals.

  4. I have tried to make meals that serve double duty. I make meatballs to serve over pasta and to make sandwiches. I also try to make two casseroles at a time, one to serve and one to keep. Southern living has great recipes for this.
    Of course when all else fails, my family is always happy with dessert. I took your good cake recipe, changed it out for chocolate and added peanut butter chips…happiness!
