A few weeks back I posted about my back to school resolution and how it has become a challenge in the middle of my ever growing schedule to find time to make supper each night. I’ve employed some creative solutions such as cooking up meals ahead of time, freezing, and using my slow cooker more. I’ve even tried ~takes a breath~ planning. I hate that part of it. I’m really a fly-by-the-seat-of-my-pants gal when it comes to supper. I like to just wait and see what I’m in the mood for when it comes time to cook. I also don’t enjoy cooking ahead as that takes the fun out of getting to cook each night for me, but I’m working on developing new habits in order to be able to adjust to a more demanding work schedule and still keep family the top priority – and it’s working.

  1. We moved back to Texas from Virginia and my 3rd grader with special needs started at a new school. We have trouble in the mornings (he doesn’t sleep well and so is tired in the mornings) so I set a goal that this year we’d have his backpack ready every night by his shoes at the front door and have his clothes picked out each night for the next day. Overall, we’ve done well with having the backpack ready every day. He’s transitioned remarkably well to his new school, thank the Lord! That, in and of itself, has made this school year start off great.

  2. This would be great to take with me when I go out as volunteer cook for Samaritan’s Purse. I could carry all of my recipes with me without lugging my laptop.

  3. I’m sorry to say my back to school plans have FAILED terribly! I’m having a rough time daily with dinner among other things. I had a routine that worked well for me, but for some reason this year it has not helped at all! Oh well, back to the drawing board and trying new plans I guess, I have to break this rut LOL. I would love to win this nook, thanks Christy for all your great recipes, tips, and giveaways!
