– Unsalted butter – Cookie butter (biscoff butter) – Light brown sugar – Granulated sugar – Egg – All-purpose flour – Baking soda – Salt
Add the butter, cookie butter, and both sugars to a bowl. Mix butters and sugars until light and creamy and beat in the egg.
Whisk the flour, baking soda, and salt in a separate bowl. Add the flour mixture into the wet mixture and mix well with a spatula or spoon.
Scoop the dough and place 2 inches apart onto an ungreased cookie sheet. Bake the cookies for the cookie butter sandwich cookies until the edges are set.
Cream the butter and cookie butter, add in the vanilla, powdered sugar and mix until combined. Then add filling to the bottom of a cookie, spread, and then top with another cookie.
