– Corned beef brisket – Pickling spice or pickling spice packet – Red potatoes or yellow potatoes – Carrots – Water – Green cabbage – Butter for serving
Arrange halved potatoes in the bottom of a 6-quart crock pot. Coat brisket with pickling spice and place fat side up on top of potatoes.
Add water to reach the top of the beef. Cook covered on low for 7-8 hours or high for 5-6 hours. After 5 hours, add cabbage and carrots on top of beef.
Continue cooking covered for 2-3 more hours on low or 1-2 more hours on high until tender. Remove beef, let rest, then slice. Serve with cooked veggies and butter if desired.
