To make Christmas cookies, cream together 2/3 cup shortening, 3/4 cup granulated sugar, and 1/2 teaspoon vanilla extract. Add 1 egg and beat until fluffy, then stir in 4 teaspoons milk. In a separate bowl, sift together 2 cups plain flour, 1.5 teaspoons baking powder, and 1/4 teaspoon salt.
Combine the dry and wet ingredients, mix well, and refrigerate the dough for at least 1 hour. Roll half of the dough to 1/8-inch thickness on a floured surface, cut into shapes using Christmas cookie cutters, and bake at 375°F for 6-8 minutes.
Let cookies cool before decorating with icing made from 1 cup confectioner's sugar, 1 tablespoon softened butter or margarine, 2 tablespoons milk, and 1 teaspoon vanilla or butter flavoring. Mix the icing, add food coloring if desired, ice the cookies, and let them set for at least an hour before storing.
