As many of you know, I had an unfortunate incident with a horse that is going to leave me unable to use my legs for a couple of months. Soon, I’ll manage to get some new posts up but right now my life is a bit on the harried side to say the least. These are my all time favorite because you mix up the batter ahead of time (A hearty batter of oatmeal and buttermilk!) and then add in whatever ingredients you want just before baking. You can make as few as one or as many as a few dozen at a time!

  1. Yummy! You always have just what I’m looking for! 🙂 My kindergartener needs cupcakes with frosting for Friday’s snack this week, and I wanted to make a healthier muffin instead of a cupcake. The Apple Cinnamon ones sound perfect, and I’m going to try a cinnamon cream cheese frosting. Yum!

  3. I started with a comment for this post, and ended up with a full page and still not done. So here is the short of it: I am sorry you are hurt, very glad that it was no worse, and I pray for your continued recovery. (Consider having hubby set up a coffee maker on your nightstand.)

    Can’t wait to try the peach cobbler muffins, but don’t have any canned peaches. So I used my last 18.25 oz size box of DH spice cake mix to make the pumpkin spice muffins. Yours didn’t look like a 29 oz can of puree, which is what I had, so I used the18oz can of pumpkin pie filling I’ve had forever. Baking for 29 minutes was not quite enough time, and I worried that my muffins were heavy. They were delicious and I will buy more spice cake mix and smaller cans of pumpkin puree and make more. Meanwhile, I’m about to mix up a batch of your anytime muffins.
